CHEZ SIMONE. BLUE. Latkes - pancakes, apple sauce... Enjoy!

Potato Latkes

Combine: 2 pounds of grated potatoes,
1 grated onion,
2 eggs,
1/4 cup of all-purpose flour (or matzo meal,)
½ tsp baking powder, and salt and pepper to taste.
Shape the mixture into pancakes, and fry them in a heavy-bottomed skillet until they are golden.
Serve with applesauce and/or sour cream.

Cheese Latkes
1 cup cottage cheese or ricotta cheese
¾ cup flour
3 large eggs, separated
1/2 tsp salt
½ tsp baking powder
Oil for frying
Combine cheese, flour, egg yolk, salt and baking powder in a large bowl. Mix until the mixture forms a thick batter. Beat egg whites until stiff and add to cheese mixture.
Heat skillet over medium heat (not too hot.) Put about 2-3 Tbsp of oil in the skillet.
Pour 1-2 tablespoon of batter onto the hot skillet to make small pancakes/latkes.
Fry the latkes for 2-3 minutes on each side until they turn golden brown.
Sprinkle with sugar.
Serve immediately. (These latkes can be served with preserves or sour cream.)

HOLIDAY BUTTER COOKIE RECIPE:
2 1/4 cups all purpose flour
1/2 teaspoon salt
1 1/4 cups butter, softened
1 cup icing sugar
1 teaspoon orange juice
2 teaspoons vanilla

Preheat oven to 325ºF.

Stir together flour and salt. Cream butter, then beat in sugar and vanilla.
Add the dry ingredients to the creamed mixture, about 1/4 at a time.

Roll out and cut into shapes, roll into specific shapes
Bake on ungreased cookie sheets (usually for 12 to 15 minutes)
or until they are lightly golden and decorate with icing and sprinkles,
let them cool down.

This recipe makes about 6 dozen cookies, enjoy!

For Macromondays Holiday Treat theme

Snowflake Cookies
I cheated and used Alton Brown’s Sugar Cookie recipe. Its a very forgiving and kid friendly dough. I like them fairly thin and crispy. I usually roll them out to about 1/8" and I bake them on a silpat. Makes for crispy golden brown bottoms and no sticking. The 1 deviation from the recipe is that I cooked them at 350F for about 8 minutes. The baking time will vary depending on the size and shape of the cookie.

The icing is a Powdered Sugar Icing. Its not as firm as Royal Icing when it sets up. It also has a nice sheen to it when dry.

2 1/2 Powdered Sugar
1/2 tsp Vanilla Extract
1 TBS Butter
2 TBS Water
1 TBS Light Corn Syrup

Combine sugar, corn syrup, vanilla, and butter into a bowl. Mix on medium and slowly add the water until the icing is the desired consistency. Color how ever you wish.

I used paste colors for the blue. The paste color is more intense than the liquid food coloring. They don’t add extra moisture to the icing, so it doesn’t impact the consistency. Huge warning though, a little goes a long way. I colored about a cup of blue icing with just a dot on the end of a toothpick.

I dipped the cookies into the icing then set the cookies on a rack. Once the icing set, I came back and piped more icing in a contrasting color. I also like the additional texture it gives.

As for the ones that are decorated with sanding sugar. I brushed them with either corn syrup or blue icing gel, then dusted them with white sanding sugar. I used a larger pearl variety because I liked the texture.

Razzle-Dazzle Berry Cheesecake Recipe

Ingredients:

1 cup graham cracker crumbs
1/4 cup sugar
2 tablespoons butter or margarine, melted
3 packages (8 oz each) cream cheese, softened
1 cup sugar
1 teaspoon vanilla
4 eggs
1 container (8 oz) sour cream
1 can (21 oz) strawberry pie filling

Directions:

1. Heat oven to 325°F. Wrap outside bottom and side of 10-inch springform pan with foil to prevent leaking. In small bowl, mix cracker crumbs and 1/4 cup sugar. Stir in butter. Press firmly in bottom of pan. Bake 12 to 15 minutes or until set.

2. Meanwhile, in large bowl, beat cream cheese, 1 cup sugar, the vanilla and eggs with electric mixer on medium speed until smooth. Beat in sour cream.

3. Spread half of cream cheese mixture (about 3 cups) over crust. Spoon half of pie filling by tablespoonfuls onto cream cheese mixture. Top with remaining cream cheese mixture. (Refrigerate remaining pie filling.)

4. Bake 1 hour 5 minutes to 1 hour 15 minutes or until center is set. Cool 15 minutes. Carefully run metal spatula along side of cheesecake to loosen. Cool completely, about 1 hour. Cover cheesecake; refrigerate at least 4 hours.

5. To serve, carefully run metal spatula along side of cheesecake to loosen again; remove foil and side of pan. Spoon remaining pie filling over cheesecake.
